At the helm is Chef Kyle Lee – a Korean chef with 15 years in London and six in Hong Kong – who weaves Japanese artistry with his worldly culinary perspective. The outcome is a refreshed era of dining that captures modern indulgence: elegant, lively, and refreshingly accessible.
Chef Lee’s vision celebrates Japanese artistry intertwined with the spirited depth of his Korean background and international experience. His inventive sashimi teases the palate with shishito pepper, yuzu-soy, and avocado mousse. Rolls unfold layers of flavour – kimchi, crispy shallots, shiso, and buttery tuna crowned with avocado and crisp textures. Meanwhile, the hot stone creations reimagine Korean techniques, presenting seabass and hamachi collar in entirely new ways. This renewed Honjo offers an experience that’s not merely about eating, but about ambience – casual yet elevated, confident yet inviting.

Just when you thought Honjo couldn’t get any spicier, in strides Chef Yoon Nam-no, aka the ‘Cooking Maniac’ from Netflix’s hit ‘Culinary Class Wars.’ Known for his exuberant chaos and breathtaking culinary skill, Yoon brings his Japanese-style French cuisine sensibility to Honjo in an exclusive 4 Hands collaboration running until 23 November.
Diners can explore a finely composed menu featuring expressive bites like Spicy Tuna Tartare with Asian pear crunch, sumptuous Ankimo Hosomaki, and indulgent abalone with herb butter. Mains include Yellow Chicken Misoyaki and Lobster Tail Hot Stone – each dish built around taste that lingers.
