The Three-Star Tables That Remain Untouchable

At the very top of the list, nine restaurants across both territories retained their three MICHELIN Stars – the guide’s highest honour. In Hong Kong, the celebrated seven return: 8 ½ Otto e Mezzo – Bombana, Amber, Caprice, Forum, Sushi Shikon, Ta Vie, and T’ang Court. Across the border in Macau, Jade Dragon retained its Three MICHELIN Star status for the eighth consecutive year, with the legendary Robuchon au Dôme continuing its reign at the summit.

The Ones To Watch: Two Stars On The Rise

Two restaurants made waves in the Two MICHELIN Stars category this edition. Cristal Room by Anne-Sophie Pic – the celebrated French chef’s second venture in Asia – earned its promotion to two stars, while L’Atelier de Joël Robuchon made a confident return following a large-scale refurbishment, securing two stars for the storied global brand. This brings the total Two MICHELIN Stars count to 19 restaurants, with 13 in Hong Kong and six in Macau.

Fresh Faces Joining The One-Star Club

Four restaurants earned their debut One MICHELIN Star this year. In Hong Kong, China Tang – the storied restaurant conceived by the late Sir David Tang, recently restored to its former elegance – joins the list alongside Sushi Takeshi, where Chef Kin’s exceptional technique and dual-vinegar rice dressing have caught the inspectors’ attention. In Macau, Don Alfonso 1890 and Palace Garden were promoted from the MICHELIN Selected category, bringing the total One MICHELIN Star count to 70 restaurants across both cities.

Going Green: A Commitment To Sustainability

The Special Awards: Celebrating The People Behind The Plates

Outside of the stars, four individuals were recognised for their outstanding contributions to the industry. Chef Kim GwanJu of Sol took home the Young Chef Award, celebrated for his deeply personal reinterpretation of Korean cuisine through contemporary craft. Jenny Ye of The Huaiyang Garden received the Service Award for her perceptive, warm approach to front-of-house hospitality. Floriane Hureau of Caprice was awarded the Sommelier Award, celebrated for her personal, adventurous approach to wine.

Most poignantly, this year also saw the inaugural Mentor Chef Award – a new accolade introduced for the first time in Hong Kong and Macau – presented to Chef Paul Lau Ping-lui of Tin Lung Heen. Having entered the culinary world at the age of 14, Chef Lau has dedicated nearly five decades to the art of Cantonese cuisine, mentoring generations of chefs who have gone on to lead kitchens across the world. A richly deserved tribute to a career defined by mastery, generosity, and an enduring passion for the craft.
